It all started with a little thing called the pandemic.

In March, 2020, Trevor Adams was happily working as a lead bread baker at the renowned Tartine Bakery in San Francisco. But like it did for so many of us, the pandemic turned his life upside down virtually overnight.

Suddenly home and anxious to continue baking, Trevor knew his congenital heart condition would delay his return to the communal bread room until there was a vaccine developed. Always dreaming of starting his own bread business, Trevor began discussing with his partner, Robin and together they transformed their garage into a micro bakery. They went all in, upgrading the power in their home and restoring a large piece of butcher block that would top Trevor’s bread bench. 

When the Rofco bread oven from Belgium arrived in August 2020, Night Heron Bread was officially born. Life has never been so good.

Bread and coffee and friends make the world a better place.

Welcomed by the Tetrahedron Coffee team in March 2021, Night Heron Bread began collaborating around a similar intention to share delicious, hyper-local, food.

We started hosting monthly garden parties in an Alameda backyard, serving up delicious, seasonally topped griddle toast with Tetrahedron's excellent coffee. The parties soon became the safest way to spend your Saturday and furthered Night Heron's pursuit in building community around exceptionally crafted food.

Sourdough & whole grain focus

We use primarily organic, locally grown whole grains and ancient sourdough techniques. There are no preservatives in our foods, ever.

Best on the island

In just a couple of years, it’s become known that we’re the only bread you want on your table for breakfast, lunch, or dinner.

Respect & support for farmers

We have relationships with all the farmers we buy from and are passionate about doing our small part to help them thrive.

We don’t just bake bread. We create connections.

We love our little island community of nature enthusiasts, fisherman, bird watchers, and bike riders, and we love making food that’s at once refined and rustic, elevated and approachable. Trevor is as close as you can get to being the “neighborhood baker,” and almost from the moment we placed the hand-painted driftwood Night Heron Bread sign in front of our home, demand for the island’s best sourdough bread was hard to keep up with. Trevor stretched his capacity, upping the number of days providing bread, buying a mixer, and finally getting a commercial sublease in the city to sell at the farmer’s market. We’re so proud of what we’ve created!
